ON-SITE TRUFFLE DIPPING SERVICE
Typically we do the on-site service as part of our "For You Alone...by Roni-Sue" wedding service [where we create a custom flavor for the wedding/event–see below]. However, we are happy do the on-site service with most of our existing flavors as well. Some molded bon-bons and some of the perzipan centers do not lend themselves to off-site production but we can guide you through the appropriate choices from our current offerings.
The on-site truffle service involves a five person crew for parties up to 300 guests, adding one worker for every 100 additional guests. Our chocolate experts are well-groomed professionals, dressed in burgundy/red chef's jackets and matching head scarves. Each crew members is trained in all aspects of the operation so that they can switch off serving, rolling, dipping and expediting to work most effectively as a team for your event.
We supply the centers [to be rolled & dipped], the chocolate for dipping, necessary toppers or finishing touches for the truffles and the equipment [melters, trays, gloves, etc] needed to produce the candies, as well as simple, contemporary designed metal serving trays to display and serve the truffles on. We are happy to serve on your dishes if you prefer to better coordinate the look of the event.
We require electricity and access to refrigeration to "set up" the truffles, a work table/space in prominent view of the guests and any matching linens/napkins needed to coordinate with the rest of your food service. If no refrigeration is available we can bring a small unit for setting up the truffles at an additional charge.
The price for up to 8 hours total, including travel to and from the venue, set-up and service is $12 -$15 per head depending on your truffle choice and # of truffles you want to provide for each guest [usually 2/person]--this service has a required minimum of 200 people.
"FOR YOU ALONE...BY RONI-SUE"
This exclusive service is a collaboration between you and Roni-Sue to develop a uniquely flavored truffle–for you alone on your special day! You'll meet with Roni-Sue for an initial consultation and tasting to explore various flavor profiles and help inform your final decision. We'll develop a prototype of your special truffle for your comments and hone the flavor until it meets with your approval. Price varies by ingredients & difficulty from $15 - $20 per head, with a 200 person minimum.
The resulting truffle can be packaged and served to your guests in a traditional duet [2 piece] favor box or for the ultimate in luxury and freshness–have our chocolate professionals hand roll and dip the truffles on-site at your wedding! Price inclusive of both services $20 - $25 per head with a 300 person minimum.
